Ghanaian African Jollof Rice, also known as Benachin, is one of West Africa’s most beloved dishes...But noone cooks it quite like the people of Ghana! Made in a single pot, this meal is a delicious infusion of tomatoes, spices, and fish that warms your soul with every bite.
Below, we’ll teach you how to recreate this iconic Ghanaian comfort food at home. We’ve used vlogger StellaZone's recipe for inspiration and a few other vloggers for handy tips.
So, let's make Ghanaians Famous African Jollof Rice!
Step 1- Bake and season your mackerel fish before you begin the Jollof Rice. Once the fish has cooled, debone it and flake the meat. Set aside. (If you’re vegan, just forget the mackerel!)
Step 2- Drizzle oil into a large pan, heat on medium and then add the onion. Cook until golden brown. Toss in the garlic and ginger, sauté for 30 seconds.
Step 3- Add tomatoes, bringing the heat up to high. Cook covered for 5 minutes.
Step 4- Add the tomato sauce and tomato paste. Bring the heat back down to medium-high.
Step 5- Put all your spices into the pot and mix well. Toss in the entire hot pepper for flavour.
Step 6- Let everything cook for ~10 minutes on medium heat, until the sauce has reduced.
Step 7- Add the flaked mackerel and bell pepper. Your stew should be quite thick by this point.
Step 8- Rinse the uncooked rice, and then add it into your pot.
Stir everything really well! Afterwards, pour in the broth and coconut milk. Add salt to taste.
Cook covered on low-medium heat for 15 minutes. Stirring occasionally.
Step 9- Mix in the carrots and green peas, before adding 1 cup of water.
Now you’re going to transfer everything into a large casserole dish, so your Jollof Rice can finish cooking in the oven. Spread the rice in an even layer, before covering the top with tin foil.
Step 10- Bake in the oven at 375°F for 60 minutes.
Once the rice is done, let everything cool for 10 minutes before digging in. Bon appétit!
